Bitter gourd (Margoz) with mustard seeds (4 pers.)
Ingredients:
500g of bitter gourd
1 tbsp of salt
1 tbsp of black mustard seeds
1 tsp of turmeric powder
1 branch of curry leaves
2 garlic cloves
Vegetable oil for frying
Preparation:
Cut thin slices of bitter gourd and remove all seeds
Put it in a big bowl, add salt and mix well. Let it rest for 10 minutes
Wash the bitter gourd well and squeeze all the water
Heat oil in a pan and fry them by small quantities
While frying, mix mustard seeds and garlic in the blender
After frying remove excess oil by letting let the equivalent of only 1 tbsp of it
In the same oil, add mustard seeds and garlic paste, curry leaves and turmeric.
Stir for 30 sec.
Add the fried bitter gourd and stir well
Add salt if needed.
It’s ready!
